This is my favorite cocktail right now – I do love the egg whites!

INGREDIENTS makes 1 cocktail</strong

1 1/2 oz. gin (London Dry, or Hendrick’s would be good)
3/4 oz. Campari
3/4 oz. fresh-squeezed lemon juice
1/2 oz. simple syrup (equal parts water and sugar, simmered and cooled)
1 egg white
1 dash orange bitters

PROCESS

Place all ingredients in a cocktail shaker WITHOUT ice. Dry shake vigorously. Hold on firmly, because of the egg white the pressure will build up during the dry shake. Gently release pressure, add ice, and shake vigorously again until frosty. Drain and serve in a martini glass.
