This recipe is so delicious and easy — you will never buy mayonnaise again!  This is full of good oils rather than the crap that is usually in it.   You need some SPECIAL EQUIPMENT for this — An immersion blender, and a tall container that is just wide enough for the blender to reach the bottom.

INGREDIENTS makes about 1 1/4 cups

1 whole egg
Juice of 1/2 lemon
1 clove of garlic minced
healthy squirt of Dijon mustard (1/2 – 1 tsp.)
1/2 tsp. salt
fresh ground pepper

1 cup light olive oil (not extra virgin which has too strong a taste for this) or avocado oil


Put all of the ingredients in your mixing container (a Mason Jar works great, as does a plastic stadium cup) in the order listed. Let the ingredients settle, so the egg is at the bottom and the oil is at the top.

Place your immersion blender in the cup, ALL THE WAY to the bottom, and turn it on.  Do not move it from the bottom of the cup.  Let it go for about 20 seconds, and the whole thing will start emulsifying.  After it is well-started, gradually bring the immersion blender up towards top of mixture to finish emulsification process.
