Kale, Potato and Andouille Soup

Recipe bonus -- Kale Stem Pesto so as to not waste food!
I used it as a base for Meatza the following week (that's pizza with meat as the crust!)

Wednesday
Salmon and Sweet Potato Cakes with Impromptu Don't Waste Leftovers Sauce
(mayo, spinach, artichoke hearts, chimichurri, and dijon vinaigrette!)

Beet and Carrot Salad (with that same sauce as the dressing)

Thursday
Blackened Mahi Mahi
Blasted Green Beans and Tomatoes

Friday
Andouille, Kale, Okra, and Red Pepper Sheet Pan Dinner (soooo easy!)

Saturday
I've been so used to eating out on the weekends, that making a special dinner helps staying at home be easier.

Lemon-Garlic Marinated Flank Steak
Mushrooms stuffed with Slow-cooked Broccoli and Anchovies
