We don’t often have sweets at home. I tend to eat on the Paleo side of things, but I don’t like to mess around with substitute ingredients in traditional baked goods. So, when I am baking, I use wheat flour, sugar, butter, dairy — but seek out the best quality. Organic, grass-fed, pastured, heirloom flours, etc. It’s more expensive but worth it since it is going in my body!
INGREDIENTS serves 8
1 unbaked pie shell or dough rolled and placed in 8-in pie dish (or a shallow 9-inch one)
2 tbsp. butter
3 cups peaches (about 4 medium), peeled and sliced, or thawed from frozen — see note below about peeling a peach!
2/3 cup sugar
1/4 cup flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
1 cup cream
Preheat oven to 425. Line pie dish with crust. Dot crust with 2 tbsps. butter. Put peaches into crust. Whisk together remaining ingredients and pour over peaches.
Bake for 35 – 45 minutes, checking for firmness of custard. It will solidify a bit more as it cools.
Note: To peel a peach, bring a pot of water to a simmer. Submerge the peach in the simmering water for about 15 seconds. Remove and with the cold water tap running, rub the peach with your thumbs under the running water until the skin comes off. Be careful, they are slippery!
