INGREDIENTS one pie shell
1 1/4 cups all purpose flour (I like to use Einkorn heirloom flour)
1/2 cup (1 stick) chilled, unsalted butter, cut into pieces
1 tbsp. sugar (this can be omitted)
pinch of salt
4 – 6 tbsps. ice water
PROCESS
Place flour in medium mixing bowl. Toss in chunks of butter and stir lightly until butter is coated with flour. Then use pastry blender to cut butter into flour until mixture resembles coarse meal with some visible pieces of butter remaining. Add 4 tbsps. water, stir in with fork until mixture starts to clump together, adding more water as needed.
Alternatively, this can be done in a food processor. Mix flour and butter until coarse meal forms, add in water with processor running, one tablespoon at a time until dough starts to come together.
Gather the dough into a ball, flatten into a disk, wrap in plastic wrap and chill for at least 30 minutes before rolling out.
