This is, hands-down, my favorite way to cook broccoli.  It is super easy to prepare since there is no pre-cooking of ingredients.  The bacon adds a lot to this, but of course, you could omit it to make it vegetarian.

INGREDIENTS serves 4-6

2 tbsp. coconut oil

1 lb. broccoli, cut into medium florets, stem sliced thin
4 slices thick-cut bacon, diced
2 tbsps. raw sunflower seeds
1/2 sweet onion (red on yellow will also do)
2 cloves garlic, minced or grated on a microplane
1 tsp. Dijon mustard (a generous squeeze)
2 tbsp. aged (or regular if you don’t have aged) balsamic vinegar
Salt and fresh ground pepper to taste


Preheat oven to 400. While oven preheats, chop broccoli, bacon, onion and garlic. Put coconut oil in 8x8 baking dish and put in the oven for a few minutes. While the oil is melting, mix the mustard, vinegar, garlic, salt and pepper in a small bowl.

Remove the pan from the oven, add the broccoli, bacon, onion, and sunflower seeds, pour the dressing over, and toss well to coat. Cover with a lid or aluminum foil.

Bake covered for 20 minutes, stirring half-way through. Uncover and bake another 15 minutes until bacon is cooked through and broccoli is starting to brown.
