Left-over lunch bonus – Usually lunch is left-overs, but since I work from home, occasionally I get to cooking mid-day.

So much lamb because I got a great deal on some grass-fed lamb at Costco; plus, it’s Easter! I bought a 5 lb. boneless leg of lamb, cut 3 lbs. of it into chunks (one for the lamb boats, two for the stew), ground and froze 1 lb. for next week’s Lamb Rogan Josh, and froze the last pound whole – we’ll see what happens with that down the road!
I also for some reason way overbought tomatoes – regular and cherry – tune in next week to see what I do with them!
And I snacked on the left-over raw sugar snap peas and raw celery (I love the little inner stalks with all the leaves) and Avocado-Tzatziki Sauce throughout the week.
