Chicken and Squash Taco Salad with Cassava-Coconut Tortilla Chips and Tomatillo-Spinach Guacamole — get the guac recipe!

Thursday
Brussel Sprout and Smoked Ham Salad — soooo good and keeps for a week of lunches, and this can go deliciously vegetarian without the ham — get the recipe!

Friday
Steak on the Grill
Grilled Radicchio and Beet Salad with Oranges and Walnuts
Leftover Cauliflower and Potato Salad with Blue Cheese — this kept very well, get the recipe!

Saturday
went to a friend’s to celebrate a birthday and graduation
Various Finger food — meat and cheese, veggies and guacamole, chips and spinach and articholke dip
