Instead of a recipe this week, I’m sharing a live video I did, cooking a ridiculously easy broccoli soup! Well, I wrote the “recipe” below, but watch the video, I give some good tips and suggestions, both about cooking and how to cook economically!
INGREDIENTS serves 4 as a main and 6-8 as a side!
1 tbsp. cooking fat (bacon grease, lard, butter, coconut oil, avocado oil)
1/4 onion, diced
4 cloves, garlic rough chopped
1/2 tsp. dried thyme
salt, pepper, crushed red pepper to taste
broccoli stalks from 3 heads broccoli
2 cups chicken or beef stock
Heat the fat in a saucepan over med-high heat and chop the onion. Put the onion in the pan, then mince garlic. Add garlic, then chop the broccoli stalks and add. Add thyme, rubbing between fingers, salt, pepper, and red pepper. If you have time, let onion brown a bit more. Add chicken stock, bring to boil, simmer for about 20 minutes until broccoli stalks are tender. Puree in a blender, adjust seasonings and serve.
Top with fried crumbled bacon or some grass-fed cheddar if you like!
