This is adapted from the Frugal Paleo Cookbook and is a GREAT way to stretch avocados and bump up the nutrition. The texture is almost mousse-like, and it keeps well for days without turning brown. Enjoy!!!
INGREDIENTS makes about 3 cups
3 large or 4 medium tomatillos, husks removed
2 large avocados
2 big handfuls baby spinach
1/2 cup cilantro
1/2 white onion, diced
4 cloves garlic, rough chopped
1/2 serrano or jalapeno pepper (seeded for less heat, seeds left in for more)
juice of 1 lime
ample 1/2 tsp salt
PROCESS
Simmer tomatillos in water for 10-15 minutes, until soft. Let cool. You oould also leave them raw. Try it both ways and see which you prefer!
Remove the flesh from the avocados. Add the tomatillos, avocados and all remaining ingredients to a food processor or high-speed blender and puree until smooth.

Yes! I’d love to know a little more (you can always email me). You probably already know this, but the best way to lower salt intake is to cook for yourself and avoid processed and canned food. If you do those things, then the levels of regular salt found in most recipes should be fine. Instead of cutting out salt altogether, gently reducing the quantities as your taste changes is a good route to go. As an electrolyte, salt is very necessary for proper body function, and I don’t love admonitions to reduce specific micro or macro nutrients.
That said, I highly recommend Himalayan pink salt for the additional minerals. A substitute I have been using (mainly for the added nutrition are kelp granules. Sea vegetables are great for iodine and trace minerals and used like this do not add a seaweed taste. They’d definitely be appropriate in this guacamole recipe. And also, there is No Salt, a branded salt substitute which is Potassium Chloride rather than Sodium Chloride. Also a great electrolyte. I actually use it along with salt and good quality water whenever I feel my body wanting to fast — this keeps the electrolyte balance good and makes fasting possible and healthful.
You can by kelp granules in bulk at health food stores, Whole Foods, etc and also in a shaker. NoSalt is definitely available at WalMart and probably regular grocery stores too. Picture below!
